In paper type and quality you should be able to set your custom paper size and type.Select the TextEdit dropdown and click on Paper type and quality.In the print window click on show details at the bottom.Open TextEdit from the Application folder.

So creating a preset in a Mac program and using it in the Microsoft program may fix the issue! Sometimes creating a preset in a Microsoft program on a Mac computer may not communicate correctly. Once the preset has been created in TextEdit, you can go back into your Microsoft Word document and choose that preset. You should be able to create a preset for your custom paper size using a Mac program like TextEdit. I would be happy to provide some suggestions that should hopefully resolve the issue! I can see that there is some issues when printing a custom paper size with your Photosmart 7510.

Incidentaly, the custom size that I created in Word was displayed as a choice in the custom names box of the dialog box.
